Vegan Chickpea Salad Sandwich
This Vegan Chickpea Salad Sandwich is a hearty, protein-packed meal that’s perfect for lunch or a quick snack. It uses mashed chickpeas as the base, creating a texture similar to traditional chicken or tuna salad, but with all the benefits of plant-based ingredients. The creamy dressing, made from vegan mayo and mustard, complements the chickpeas beautifully, while fresh celery and green onions add crunch and flavor. This sandwich is not only delicious but also easy to prepare and can be enjoyed on whole-grain bread, lettuce wraps, or a gluten-free option.

1 can (15 oz) chickpeas, drained and rinsed
1/4 cup vegan mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/4 cup finely chopped celery
1/4 cup finely chopped green onions

Optional: Lettuce, tomato, and bread (or wraps)

Combine the Salad:
Add the chopped celery and green onions to the mashed chickpeas. Pour in the dressing and stir to combine. Season with salt and pepper to taste.
Assemble the Sandwich:
Spread the chickpea salad mixture onto slices of whole-grain bread, gluten-free bread, or use lettuce wraps as an alternative.
Serve:
Serve immediately with a side of chips, or refrigerate for later. This chickpea salad also makes a great filling for wraps or bowls.
